Thai Curry VEGGIES!!!

I know most of you think Veggies are boring. I really love my veggies especially when you mix flavors together. This is a fast and easy one. You can add meat to it or just have it be vegetarian.

Just slice up some veggies.

Get a pan hot with a spoonful of coconut oil. Saute the veggies on high for about 8 to10 minutes. Salt and pepper.

Then add a can of Coconut milk. reduce heat to a simmer and add curry powder. There are so many different kinds of curry. My favorite is red curry. There is green curry, yellow curry. Probably some types of curry I don't even know about.

You can find curry near the soy and teriyaki sauce in your local grocery store. They also sometimes keep it in the spice section but the good kind is normally near the soy sauce shelf. I normally put in a spoonful or two. You can also add ground red pepper if you want to make it spicy. My husband is a hot sauce master so everything needs to be spicy.

Let this simmer for 10 to 20 mins. Then serve it on top of your favorite rice. ENJOY!!!
