Eggplant and Marinara

Eggplants are unusual vegetables that have a unique range of health benefits, including an ability to help build strong bones and prevent osteoporosis, protect the digestive system, help lose weight, manage diabetes, reduce stress, and even prevent cancer.

For valentine’s day my husband and I decided to try them two different ways. We picked these baby eggplants up at the farmer’s market earlier that day.

We sliced them thin, then dipped them in egg and then lightly floured and used light breadcrumbs, salt and pepper. (I really recommend using panko bread crumbs but we were all out). Also if you are going to bake them, dip them one more time in egg so they come out a little crispier.

We fried one batch in Vegetable oil (not the healthiest way) Then we baked the other batch at 375 for 40 minutes flipping them 1 time halfway through cooking.

We served them with marinara.
