Baked veggies

This is one of my favorite veggie dishes to make. It's easy and you can pretty much use any vegetable that you love.

Just preheat your oven to 375 and bake for 40 to 45 mins.

While your oven is preheating take that time to chop your veggies. Or cut them up the night before and stick the whole dish in the fridge if you are in a hurry.

I used sweet peppers, Lots of garlic, carrots, brussel sprouts, and cherry tomatoes in this dish. I used a little olive oil and shook up the pan to coat all the veggies evenly. Add salt, pepper, and some fresh or dried herbs. I love using rosemary, thyme and oregano. You can add anything that you love.

You can even bake chicken at the same time. Enjoy! XO Liz
