Happy eggs

Eggs has to be by far my favorite breakfast food because the protein keeps you full longer.

Eggs are a very good source of inexpensive, high quality protein. I the organic ones from Costco because it's 2 dozen for around $6.00- $7.00.

More than half the protein of an egg is found in the egg white along with vitamin B2 and lower amounts of fat and cholesterol than the yolk along with many vitamins.

Spinach is low in fat and even lower in cholesterol, and high in protein.

I took this picture before the egg was cooked, but I do love my yolk runny (not this runny). Ha!

I start my pan with a little coconut oil. I get the pan hot on medium heat. I then start with about ¼ of a red onion and saute it for about 3 minutes.

I add my spinach and let it wilt.

Then I crack my eggs. You can add crumbled bacon or turkey bacon on top or a little shredded cheese. I cook it about a minute or two and flip it but try to allow the yolk to be a little runny.

Salt and pepper and you have a fast, healthy breakfast.

If you don't want to spend money on your spices grow your own spice garden. Parsley, oregano, rosemary and cilantro are an easy
