Easy Chicken & garlic, ginger bok Choy

So you might be thinking... What is a Bok Choy. It's just a vegtable, or a Chinese cabbage.

One cup has just 9 calories and barely a trace of fat, yet delivers protein, dietary fiber and almost all the essential vitamins and minerals.

I love it and guess what I got 4 of them for $2 at the farmers market last Sunday. If you aren't buying your veggies at the local farmers market start now! You will save money and help support local farmers.

Just chop it up removing the very ends and dice up some garlic cloves.

It cookes very qickly. Add some coconut oil to a medium heat pan. Then once the pan is hot add the garlic first. Brown it a little and then add the Bok Choy.

I added some ginger and a little soy sauce at the end.

Then at the same time as my bok Choy is cooking I get my chicken ready for a different pan.

I used Mrs. Dash Lemon pepper seasoning blend to season my chicken.

The cooking time for this is about 10 mins, Prep about 5, Total 15!!

So you have dinner in no time. It's a great healthy meal and it's fast.
