This salad is loaded with Sunflower seeds and sunflower sprouts.
That's why I'm naming it the Sunny Salad.
Sunflower seeds are loaded with Vitamin E, copper, B Vitamins like thiamine, phosphorus, selenium, and more. Sunflower seeds, like nearly all types of nuts and seeds, provide a healthy source of essential fatty acids; their specific fatty acids are in the form of linoleic acid.
Sprouted sunflower greens, known as microgreens, also contain up to 100 times the enzymes of regular, full-grown greens. This means your body can more easily assimilate important phytonutrients, vitamins and minerals. You can plant seeds and in just a week have some of the most beneficial micro-greens around!!
I also added Arugula lettuce, carrots and avocado. It's a really easy fast salad to make, great for your side dish or lunch!
ENJOY XO Liz
