Make your own homemade pickles

I love pickels!! My kids love pickles. We go through a ton of pickles. Why not make my own? It's easy and takes about 5 to 10 mins.

The health benefits of pickles include a good supply of essential vitamins, minerals, and antioxidants, contributes to modest diabetes control, improved digestion, liver protection, a supply of probiotics, and the ability to heal ulcers.

Also, pickle juice can be a cure for post workout cramps. Many athletes swear by it because it helps to rebuild electrolytes post-workout. Pickle juice actually helps some people soothe heartburn because of the vinegar and it can cure a hangover because itreplenish your depleted sodium levels..

Today I decided to try something a little different. I made some regular dill pickles too but I thought why not try something new and spicy.

I cut up

cucumbers, I used the small ones from the farmers market

3 or 4 cloves of garlic

ginger (from a ginger root- I used 1/2)

1 jalapeno.

Whole Fresh Dill- 5 springs

You also need mason jars

⅔ cups of Vinegar

1 tablespoon Sugar

1 ½ tablespoon Salt

1 tablespoon Coriander seeds

1 cup water

In one mason jar

Add Vinegar, Sugar, salt, and coriander seeds Shake it up until it’s dissolved.

You can then add all your other ingredients into another jar- cucumbers, 3 or 4 cloves of garlic

chopped ginger (from a ginger root- I used 1/2), 1 jalapeno chopped, Whole Fresh Dill- 5 springs

Pour the brine on top from your other jar and then fill up to the top with water.

If you want just Dill pickles leave out the ginger and jalapenos.

You will need to let your jars sit for 1 to 2 weeks before your pickles are ready so label your jars.
