Warm pasta & cabbage dinner
So this might not be my cleanest dinner since it has bacon!
But you can use cooked chicken instead. It's really nice to eat on a cold night. Not that we get a tone of those in Florida. I love the flavor of the warm cabbage paired with the parmesan cheese. It's spicy too (if you don't like spicy leave out the peppers).
This would be another fast dinner to make if you cut everything up on the weekend and premake the bacon or chicken that you add at the end.
Here is what you need:
about 1/4 of box of fusilli or spiral shaped pasta.
1/2 a head of savoy cabbage or cabbage shredded like above
6 bacon sliced
1 onion
2 garlic cloved - I used more
2 hot red chili peppers- (unless you don't like hot )
6 tablespoons parmesan cheese
Salt and pepper
Cook the pasta according to the box in a large pot and about 5 mins before the pasta is done throw in the cabbage.
While the pasta and cabbage are cooking and if you don't have the bacon precooked then in another pan start cooking the sliced bacon. Cook it for 2 minutes and add the onion, garlic and chilies and cook until the bacon and onion are done. I did my bacon separate in the oven to get it crispy. Then I sauteed my onion, garlic and chilies with coconut oil. Season with salt and pepper.
Drain the pasta and cabbage and put it back in the big pot. Mix in the onion, garlic, chilies, the bacon, and add the parmesan cheese.
Divide into bowls and add more salt, pepper and parmesan. It makes about 4 to 6 servings and is best if you serve it right away.
