Curry coconut chicken and Veggies

I have to give my husband credit, he made this dinner tonight.

I did chop up these veggies for him so they were all ready to go.

Here we have broccoli, bok choy, onion, carrot and on the top right corner are radish sprouts from my garden. (I had to pick some to avoid crowding or they won't grow).

You can really use any veggie it doesn't have to be these ones, most go great in this dish.

Heat a big wok, chop up some chicken. Add the chicken with some coconut oil, browning it a little and then add the veggies.

Add a can of coconut milk, 2 spoons of your favorite curry. I really love yellow and red curry but there are a ton to choose from.

Add salt and pepper and if you like spicy then add ground cayenne pepper (red pepper). Add this to taste depending on how spicy you like your food.

Serve over rice.
